Accompanying literature says to "have a qualified electrician set up unit...and unit is not for home use". Becky is an E.E. and I have worked with machines off and on for fifty years or more so we took a chance and set it up. Put in right on top of our glass-topped stove and plugged it in its own surge protector and filter (TrippLite here on Amazon). Marked which house fuse switches were to be turned off if an emergency occurred and set up goggles and mask next to the kitchen fire extinguisher. Turned the fryer on at 100 F and measured oil temp with a laser thermometer ( bought here at Amazon). The unit runs 50�F higher then the setting at lower temperatures. When we got up to 300 F the oil temperature started matching the thermometer settings. Fairly standard deviation at lower temperatures. The temperature of the oil was almost instantly at 100�F. Literally.The outside of the fryer stayed cool to the touch till about 300�F and then the top outside of the unit got fairly warm but not as hot as a frypan on the stove.
The unit takes one gallon of oil minimum and about two gallons maximum. We used vegetable oil. We used only one basket in the middle of the tank and set the temp control to 400�F - all the way up - to fry French fries. Set the basket in the oil yo heat up and dropped the fries singly into the oil over the basket to sear before hitting the basket so they would not stick to basket. Twelve fries at a time cooked in a minute and a half. One large potato made two large servings of great fries.
Cleaned and quartered a small basket of mushrooms and stirred them into a quick thin Flour milk and salt and pepper batter and fryed them up. Twelve mushroom quarters at a time cooked in less than a minute.
With the leftovers batter we tossed in some cinnamon and a three-fingered pinch of sugar and made beignets - added dried apple pieces and had apple fritters.
The fryer did not "spit" oil but there is a fine thin mist of oil on the stove and us. We did use safety glasses that we use mowing the lawn and a full length leather apron - from neck to knees.
The oil reheated itself almost instantly after putting food in - so no soggy oil-spongy food. Crisp outside and cooked inside.
There is no top to the fryer. To get the oil out you let it cool and lift the pan out with the two folding inbuilt handles.
The cord is - guessing here - 10 gauge. - and three prong and is Not a magnetic break-away but hardwired into the unit.
This fryer is not cheap-rattly feeling nor a plastic toy. It is a stainless steel not too heavy open frame at the bottom serious cooking machine. In my opinion out of an abundance of caution I would Not let a child even in the kitchen while this or Any Other fryer was in use.
We love this fryer and am really happy Amazon had it on half-price because it is costly ... but you definitely get what you pay for with this unit.
