I've been trying multiple methods to perform sous vide cooking at home WITHOUT buying the PolyScience commercial version, given the prohibitive cost. I have tried several DIY methods with uniformly horrible results.Overall, I believe that this appliance is the least expensive way to perform water bath cooking, along with the new sideKIC which I will review later.
There are two modifications which you need to do to make this unit better, however.
This model works on the "water temperature convection" principle, which means that the hot water created by the bottom-placed heating element will rise to the top and cause passive temperature convection. However, I believe this would lead to inaccurate temperature readings and hot spots, without the "hydraulic circulation" effect provided by a water pump. Finding an appropriate submersible water pump has been an ordeal in and of itself, as every aquarium pump which I tried has inevitably perished after just a few days of high temperature cooking (see my other reviews). If you can find an inexpensive high temperature submersible water pump, then that would make this device almost perfect. I found that the large heating element is able to bring water to temperature MUCH faster than the DIY single-cup coffee boiler elements that everyone is using and which is featured in the sideKIC.
The other problem is that the basket into which you place your vacuum bags is QUITE small. Therefore I recommend purchasing a stiff metal screening material from Lowes or HomeDepot (usually down the building supply aisle with the stucco products), then cutting and bending a piece to form a raised cage floor at the bottom of the unit to protect your bags from the heating element, and do away with the removable basket entirely. This will drastically increase your usable space inside the tank.
The AquaChef digital display control leaves a bit to be desired. The readout does NOT tell you what temperature the water is. It shows you only the target temperature. But a separate LED indicator turns red when the water is below the target temp (ie when the heating element turns on), and then turns blue when it has reached the target temp. Regarding accuracy, I placed a separate thermometer into the water and noticed that the element turns off almost exactly at the target temperature (never getting more than 0.2 F above the target. But once the element turns off, it does not turn back on again until the water temperature drops to 2.5 F below the target temp. This means that your food will spend a good deal of time about a degree or TWO below your target temp. For some people, this may be a deal breaker if you demand very strict temperature control.
I would say that this is a very strong competitor to the Sous Vide Supreme at half the price.

This package includes multiple bonus items such as a flame torch, digital thermometer, vacuum bags and handheld vacuum sealer. The quality of the bags included in this package are surprisingly high quality and are resealable. The handheld vacuum actually works pretty well, even when comparing it to my brand new Food Saver counter top vacuum. The butane torch works very well (once butane is added from a refueling canister which is not included). And the digital thermometer is just as good as any of the others I purchased from houseware stores. Overall this is a very generous package considering the moderately good quality of the bonus items.
